This was inspired by a restaurant that has since closed, Aloha Island Grill. They served sliced steak with a sauce that I loved and needed to make for myself. Here’s as close as I’ve gotten.
I use it with thinly-sliced tri-tip steak. Half the recipe gets mixed into the meat and I let it marinade for a few hours. The other half is saved to dip or pour on the steak and rice when it’s time to eat 😛
Start by boiling 1 cup of water.
To it, add:
150 grams white sugar
50 grams minced fresh garlic
1/2 cup soy sauce
1 Tablespoon granulated garlic
1 Tablespoon Sri racha, optional for heat
1 Tablespoon cornstarch, made into a slurry and added.
Make sure to boil the mixture for at least a minute after you add the cornstarch so it can thicken the sauce. Also, your sugar should be dissolved.
Cool before using as a marinade on meat.
